Hainanese Fried Rice

CHNG Kee's sauce(s) used:

  • CHNG Kee’s Hainanese Chicken Rice Mix


Serves 8


Cooking Method (Hainanese Chicken Rice)

  1. Add all of ingredients A into rice cooker, and stir well.

  2. Switch on rice cooker to allow rice to cook.


Cooking Method (Hainanese Fried Rice)

  1. Heat up cooking oil, and add inadd beaten eggs to stir-fry for 1 min, followed by chicken breast cubes, sausages and dried mushrooms for a few minutes.

  2. Pour in chicken rice, and mix with chicken seasoning and pepper powder.

  3. Break up clumps formed with ladle, and toss to coat rice completely with mixture.

  4. Add green peas last, and serve when the rice is fragrant.

Ingredients A (Hainanese Chicken Rice)

  • 250 ml (1 jar) CHNG Kee’s Hainanese Chicken Rice Mix
  • 1,300 ml water
  • 1 kg of Thai fragrance rice (rinsed and drained)

Ingredients B (Hainanese Fried Rice)

  • 240 gm chicken breast meat (diced and cooked)
  • 80 gm sausage (diced)
  • 80 gm dried mushrooms (diced and soaked)
  • 50 gm green peas
  • 10 gm chicken seasoning
  • 3 gm pepper powder
  • 40 ml cooking oil
  • 4 pcs eggs (beaten)
